Cooking with truffles

If possible, use fresh, fully mature truffles. The truffle is a regional product; to bring out its uniqueness, it is best used in simple recipes where the truffle is given pride of place. Most recipes listed on this web site are simple to prepare and bring out the best of the truffle. It is preferable to heat up truffles so that they release their aromas fully, while not overcooking them so that they retain their flavour and crunchy texture. To further accentuate their texture, fresh truffles should not be crushed but cut into discs so as to keep their crunchiness.
